  • 2 lbs beef chuck roast, cut into large chunks
  • 1 tbsp coconut oil
  • 1 large yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp chili flakes (optional)
  • 1 tbsp tomato paste
  • 1 (14 oz) can full-fat coconut milk

Instructions

  1. Heat coconut oil in a large pot over medium heat. Sauté chopped onion for about 5 minutes until translucent.
  2. Stir in minced garlic and grated ginger; cook for another 2 minutes until fragrant.
  3. Increase heat to medium-high and brown beef chunks on all sides for about 5–7 minutes.
  4. Add curry powder, turmeric, coriander, and optional chili flakes; stir well to coat the meat.
  5. Mix in tomato paste and then pour in the coconut milk. Bring to a simmer over low heat.
  6. Cover and cook for about 1.5 to 2 hours until beef is tender.
  7. Serve hot over steamed rice or alongside crispy fries.
