  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 tbsp tomato paste
  • 1 (14 oz) can full-fat coconut milk
  • 1 cup beef broth

Instructions

  1. Prepare all ingredients: chop onions, mince garlic, and grate ginger.
  2. In a large pot or Dutch oven, heat coconut oil over medium heat. Sauté onions until translucent, then add garlic and ginger—cook until fragrant.
  3. Stir in spices (curry powder, turmeric, cumin, smoked paprika, and cayenne), followed by tomato paste; toast for about 30 seconds.
  4. Brown beef chunks in the pot for about 5–7 minutes until all sides are seared.
  5. Pour in coconut milk and beef broth; bring to a simmer while scraping any browned bits from the pot.
  6. Cover and reduce heat to low; braise for about 2 hours until beef is fork-tender.
  7. Serve hot over steamed rice or with naan bread.
