  • 4 large eggs
  • 1 tsp vanilla extract

  • 1 tsp salt
  • 1 cup buttermilk (room temperature)
  • 1 cup chopped pecans (lightly toasted for best flavor)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk melted butter and granulated sugar until smooth. Beat in the eggs one at a time, ensuring each is fully incorporated. Follow with the vanilla extract.
  3. In another bowl, whisk together flour, baking powder, baking soda, ground cinnamon, and salt. Gradually add this dry mixture to the wet ingredients while alternating with buttermilk. Mix until just combined—be careful not to overmix! Gently fold in the chopped pecans.
  4. Pour your batter into the prepared pan(s). If desired, mix together the optional cinnamon sugar topping and sprinkle it over the top of the batter. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.
  5. Allow cooling in the pan for about 10-15 minutes before transferring to a wire rack to cool completely.
