  • 1 sweet red bell pepper (diced)
  • 1/3 cup Greek yogurt
  • 8 tortillas (corn or flour)
  • 1/2 teaspoon smoked paprika (or more)
  • 1/2 teaspoon chili powder (or more)
  • salt and pepper (to taste)
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1/4 cup red onion (diced)
  • 3 green onions (diced)
  • 1/2 bunch fresh cilantro (chopped)
  • 1/4 teaspoon chili powder (or more)
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Sriracha
  • 1 lime (medium size, freshly squeezed)

Instructions

  1. Season chicken breast with smoked paprika, chili powder, salt, pepper, olive oil, and lime juice.
  2. In a skillet over medium-high heat, cook the seasoned chicken for about 5-7 minutes on each side until fully cooked. Remove and let rest before slicing.
  3. For the peach salsa, mix diced peaches, red bell pepper, red onion, green onions, chopped cilantro, lime juice, chili powder, salt, and pepper in a bowl.
  4. Prepare cilantro-lime crema by whisking together Greek yogurt, mayonnaise, Dijon mustard, Sriracha, lime juice, and chopped cilantro until smooth.
  5. Warm tortillas in a skillet for about 30 seconds on each side. Assemble tacos by layering sliced chicken, peach salsa, and crema on each tortilla.
