  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 cup cooked brown rice

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken strips seasoned with salt and pepper, cooking until browned and fully cooked (about 6-8 minutes). Set aside.
  2. In the same skillet, stir-fry the chopped zucchini, broccoli, red bell pepper, and onion for about 5-7 minutes until tender-crisp. Add soy sauce and garlic powder, mixing well before returning the chicken to the pan.
  3. Warm the cooked brown rice separately in a small pot or microwave until heated through.
  4. Plate the stir-fry alongside the brown rice. Optionally garnish with chili flakes or sesame oil before serving warm.
