  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (10-ounce) package frozen spinach, thawed and squeezed dry
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1 lb penne pasta
  • Pinch of nutmeg (optional)

Instructions

  1. Cook penne pasta according to package instructions until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper; cook until browned and cooked through. Remove and set aside.
  3. In the same skillet, cook chopped onion until softened, then add minced garlic and sauté until fragrant.
  4. Stir in thawed spinach and heat through.
  5. Pour in chicken broth and heavy cream; bring to a simmer until slightly thickened.
  6. Add Parmesan cheese, cooked chicken, and penne to the skillet; combine well. If too thick, add reserved pasta water to adjust consistency.
  7. Serve immediately with extra Parmesan if desired.
