  • 1 cup mascarpone cheese (room temperature)
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups strong brewed espresso or coffee (cooled)
  • 3 tbsp almond-flavored syrup
  • 1 package ladyfinger cookies (about 7 oz)
  • 1 ½ cups cherry preserves
  • ½ cup fresh cherries, pitted and halved

Instructions

  1. In a large bowl, whip heavy cream until soft peaks form.
  2. Add mascarpone cheese, powdered sugar, and vanilla extract; whip until smooth and fluffy.
  3. In a shallow bowl, combine cooled espresso with almond-flavored syrup.
  4. Quickly dip each ladyfinger into the espresso mixture and layer them in a 9×9-inch dish.
  5. Spread half the mascarpone mixture over the ladyfingers, followed by half of the cherry preserves and halved cherries.
  6. Repeat layering with remaining ingredients.
  7. Cover and refrigerate for at least 6 hours or overnight for optimal flavor.
  8. Dust with cocoa powder before serving.
