  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub and dry potatoes; pierce them several times with a fork.
  3. Rub each potato with olive oil and season with salt and pepper. Place on a baking sheet.
  4. Bake for about 45 minutes until tender.
  5. In a skillet, cook ground beef over medium heat until browned; drain excess fat.
  6. Stir in taco seasoning with water as directed; simmer for 5 minutes.
  7. Once potatoes cool slightly, cut open and fill with ground beef mixture and cheese.
  8. Return to oven for another 5 minutes until cheese melts.
  9. Top with sour cream, green onions, tomatoes, olives, and cilantro before serving.
