  • 1 lb boneless, skinless chicken breasts
  • 12 oz bowtie pasta
  • 4 tbsp unsalted butter
  • 4 cloves garlic
  • 3 cups whole milk
  • 8 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Cook the bowtie pasta in salted boiling water until al dente, about 10 minutes. Reserve some pasta water, then drain.
  2. Toss cubed chicken with olive oil, Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. Cook chicken in a skillet over medium-high heat until golden brown and cooked through.
  4. In the same skillet, melt butter and sauté minced garlic until fragrant. Whisk in flour to make a roux, then gradually add milk while whisking until thickened.
  5. Stir in Velveeta and cream cheese until melted; then mix in mozzarella and Parmesan.
  6. Combine the cooked chicken and pasta with the sauce. Adjust consistency with reserved pasta water if needed.
