  • 2 tablespoons butter
  • 2 cloves garlic (crushed)
  • 56 large Portobello mushrooms (stem removed, washed and dried thoroughly)
  • 56 fresh mozzarella (cheese balls, sliced thinly)
  • 1 cup grape (or cherry tomatoes, sliced thinly)
  • 1/4 cup balsamic vinegar
  • 1 tablespoon fresh parsley (chopped)
  • 1 pinch fresh basil (shredded to garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine butter, crushed garlic, and chopped parsley.
  3. Clean the Portobello mushrooms and brush both sides with the garlic butter mixture.
  4. On a baking sheet, layer each mushroom with mozzarella slices followed by tomato slices. Drizzle remaining garlic butter on top.
  5. Bake for about 10 minutes until the cheese melts and bubbles.
  6. For the balsamic glaze, simmer vinegar until reduced to a thick consistency; drizzle over baked mushrooms and garnish with shredded basil.
