  • 12 oz twisted pasta (like rotini or fusilli)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 tbsp olive oil
  • 1 tbsp Cajun seasoning (plus extra to taste)
  • 1 tsp garlic powder
  • Salt & black pepper, to taste
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • Chopped parsley for garnish

Instructions

  1. Cook the twisted pasta in salted boiling water until al dente. Drain, reserving some pasta water.
  2. Season the sliced chicken with Cajun seasoning, garlic powder, salt, and pepper. Sauté in olive oil over medium-high heat until golden brown and cooked through.
  3. In the same skillet, melt butter, then add minced garlic and sauté. Pour in chicken broth and heavy cream, scraping up browned bits.
  4. Mix in cream cheese and mozzarella until melted into a smooth sauce. Adjust consistency with reserved pasta water if needed.
  5. Combine cooked pasta and chicken in the skillet; toss to coat thoroughly. Simmer for 2 minutes to meld flavors.
  6. Serve hot, garnished with chopped parsley.
