  • 9 tbsp salted butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tbsp heavy cream
  • 1 1/4 cup all-purpose flour
  • 3 cups kataifi (shredded phyllo dough)
  • 1 cup pistachio cream/butter
  • 2 cups heavy cream
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F. Grease an 8×8-inch baking pan and line it with parchment paper.
  2. In a saucepan, melt the butter over medium heat until golden brown. Let it cool slightly.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  4. Combine both sugars in the bowl with the cooled butter; whisk in the egg, heavy cream, and vanilla extract until smooth.
  5. Fold the dry ingredients into the wet mixture until just combined, then fold in chocolate chips.
  6. Spread the cookie dough evenly into the prepared pan and bake for 22-27 minutes until lightly golden.
  7. Toast kataifi in melted butter until golden and mix with pistachio cream once cooled.
  8. Prepare ganache by heating heavy cream and pouring it over chocolate chips; stir until smooth.
  9. Layer the pistachio filling over cooled cookie base followed by ganache; sprinkle chopped pistachios on top.
  10. Chill for at least one hour before cutting into bars.
