  • Nonstick cooking spray, for greasing
  • 1 stick unsalted butter
  • 3 large ripe bananas, mashed, plus 1 halved lengthwise for decoration
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 cup dark brown sugar, plus more for sprinkling
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • ½ teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8.5-by-4.5-inch loaf pan.
  2. In a light-colored sauté pan, melt the unsalted butter over medium heat until golden brown and fragrant. Allow it to cool slightly.
  3. In a bowl, combine mashed bananas and eggs, beating until smooth.
  4. In another bowl, whisk together flour, dark brown sugar, baking powder, cinnamon, salt, and nutmeg.
  5. Fold the banana mixture into the dry ingredients gently, then add the cooled brown butter and mix until just combined.
  6. Pour batter into the prepared pan, top with halved bananas cut-side up and sprinkle with more dark brown sugar.
  7. Bake for 70-80 minutes or until a toothpick comes out clean from the center.
