  • 2 1/2 cups cake flour
  • 2 Tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp fine salt
  • 1/2 cup unsalted butter, room temperature
  • 1 3/4 cups granulated sugar
  • 2 large eggs, room temperature
  • 1 1/4 cups buttermilk, room temperature
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 tsp white vinegar
  • 1 tsp red gel food coloring
  • 1 1/2 cups unsalted butter, room temperature (for frosting)
  • 1 cup full-fat cream cheese, room temperature
  • 1 Tbsp vanilla extract (for frosting)
  • 1 tsp fine salt (for frosting)
  • 7 cups powdered sugar
  • 3 Tbsp heavy whipping cream, room temperature
  • small squirt of red gel food coloring (for frosting)
  • 1/2 cup seedless raspberry jam
  • 3 Tbsp water
  • 1/4 tsp red gel food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your cake pans with butter and dust them lightly with flour.
  3. In a mixing bowl, combine the cake flour, cocoa powder, baking soda, and salt. Whisk together until well blended.
  4. In another bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
  5. Add the eggs, then mix in the buttermilk, oil, vanilla extract, and white vinegar. Blend until fully incorporated.
  6. Gradually add the dry ingredients into the wet mixture. Mix until just combined. Add in the red gel food coloring for color.
  7. Divide batter evenly between prepared pans. Bake for about 27 minutes or until a toothpick inserted comes out clean. Let them cool completely on a wire rack before frosting.
  8. In a large bowl, beat together the remaining butter with cream cheese until smooth. Gradually add powdered sugar while mixing on low speed. Finally, mix in heavy whipping cream and desired color of gel food coloring.
  9. Once cakes are cooled, level them if necessary. Spread some raspberry jam between layers before stacking. Frost with pink buttercream all over to create a brain-like appearance.
  10. Drizzle raspberry jam over the top for a bloody effect.
