  • 56 medium sweet potatoes (peeled & cut into thin medallions)
  • ¼ cup unsalted butter (or plant-based alternative)
  • ¼ cup brown sugar (light or dark)
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan vegan marshmallows

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and slice the sweet potatoes into thin medallions. Arrange them in a baking dish.
  3. In a medium saucepan, combine butter, brown sugar, water, spices, and salt over medium heat until melted and combined.
  4. Brush three-quarters of the sauce over the sweet potato layers and cover with foil. Bake for 45-50 minutes.
  5. Remove foil, drizzle remaining sauce over top, sprinkle with nuts and marshmallows.
  6. Switch oven to broil for 1-2 minutes until marshmallows are golden brown.
  7. Allow to cool slightly before serving.
