  • 1 1/2 cups cold unsalted butter, cubed

  • 2 cups dried apricots, chopped
  • 1 1/2 cups water
  • 1/2 cup granulated sugar (adjust to taste)
  • 2 tablespoons lemon juice

Instructions

  1. In a medium saucepan, combine chopped apricots, water, and sugar. Simmer over medium heat until tender (15-20 minutes). Stir in lemon juice and let cool.
  2. Preheat oven to 375°F (190°C). Grease or line a 9×13 inch baking pan.
  3. In a large mixing bowl, whisk flour, sugar, baking powder, and salt. Cut in cold butter until crumbly. Mix in beaten egg and vanilla until just combined.
  4. Press about two-thirds of the dough into the prepared pan as the crust. Spread cooled apricot filling evenly on top.
  5. Crumble remaining dough over the filling and bake for 30–35 minutes until golden brown.
  6. Allow cooling completely before cutting into bars.
