  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon kosher salt
  • ¾ cup unsalted butter, room temperature
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • ½ cup whole milk
  • 2 ounces cream cheese, softened
  • ½ cup granulated sugar
  • 2 cups heavy cream
  • ½ teaspoon vanilla extract
  • 1 pinch kosher salt

Instructions

  1. Prepare the apple filling by cooking diced apples with sugar, lemon juice, cinnamon, and butter until soft. Thicken with flour.
  2. Make the cupcake batter by combining dry ingredients, creaming butter and sugar, adding eggs, vanilla, and alternating milk.
  3. Assemble cupcakes by filling liners with batter, adding apple filling, then topping with more batter.
  4. Bake at 350°F (175°C) for 20-25 minutes until a toothpick comes out clean; let cool.
  5. For the topping, beat softened cream cheese with sugar, then fold in whipped heavy cream before spreading on cooled cupcakes.
