  • 1 ¾ cups flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 ½ teaspoon cinnamon
  • ¼ teaspoon ginger
  • ½ teaspoon nutmeg
  • ½ cup granulated sugar
  • ¼ cup plus 2 teaspoons brown sugar (light or dark, packed)
  • ¼ cup apple butter or applesauce
  • 2 eggs
  • ¼ teaspoon vanilla
  • 3 tablespoons butter (melted) for coating
  • ¼ cup sugar for coating
  • ½ teaspoon cinnamon for coating
  • Filling options: Brown Sugar Cream Cheese Icing or an alternative without alcohol

Instructions

  1. Preheat your oven to 350°F. In a medium saucepan, boil the apple cider on medium-high heat until reduced to about ¼ cup. Allow it to cool.
  2. Sift flour, baking powder, baking soda, salt, and spices in a bowl.
  3. In a separate bowl, beat room temperature butter with sugars until combined. Add vanilla and eggs, mixing well. Slowly stir in cooled apple cider and apple butter/applesauce.
  4. Gradually mix in dry ingredients until just combined.
  5. Scoop mounds of dough onto parchment-lined baking sheets and bake for 11-13 minutes until cookies spring back when touched.
  6. Cool cookies before filling them with your chosen icing.
