  • 2 cups apple cider
  • 3 tbsp granulated sugar
  • 1 ¾ cups all-purpose flour
  • 2 ½ tsp ground cinnamon
  • ¾ cup unsalted butter, softened
  • 6 oz cream cheese
  • 2 egg yolks
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup light brown sugar, packed
  • 2 tsp vanilla
  • 2 tbsp apple cider reduction
  • 1/4 cup granulated white sugar for topping
  • 1/4 tsp ground cinnamon for topping
  • 1/8 tsp ground nutmeg for topping
  • pinch ground allspice for topping
  • 12 tbsp salted butter, melted for topping

Instructions

  1. Prepare an apple cider reduction by simmering apple cider in a saucepan until thickened (about 30 minutes). Let cool.
  2. Mix cold cream cheese with sugar and vanilla until smooth; add cooled apple cider reduction and refrigerate.
  3. Whisk together flour, spices, baking powder, baking soda, and salt in one bowl. In another bowl, beat butter with sugars until fluffy; add egg yolks and mix well.
  4. Gradually combine dry ingredients into wet ingredients until just mixed.
  5. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop dough onto sheets, flatten slightly, place cheesecake filling in center, and encase it completely.
  6. Bake for about 11 minutes until edges are golden but centers remain soft; cool on a rack.
