  • For the streusel topping: ½ cup all-purpose flour
  • ¼ cup packed light brown sugar
  • ¼ cup granulated sugar
  • ¼ teaspoon ground cinnamon
  • ¼ cup cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the dry ingredients: flour, baking soda, baking powder, spices, and salt.
  3. In another bowl, combine the wet ingredients: pumpkin puree, sugars, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gently fold the wet mixture into the dry mixture until just combined; lumps are okay.
  5. For the streusel topping, mix flour, sugars, and cinnamon in a small bowl; add cold butter and mix until crumbly.
  6. Divide muffin batter among the prepared cups and sprinkle with streusel.
  7. Bake for about 18-22 minutes or until a skewer inserted comes out clean.
