  • 1 cup lime juice (freshly squeezed)
  • Salt to taste
  • 1 small red onion (thinly sliced)
  • 3 cloves garlic (chopped)
  • 3/4 cup fresh cilantro (chopped)
  • 1 large jalapeño pepper (chopped)
  • 1 medium cucumber (sliced)
  • 3 radishes (thinly sliced)
  • 1 teaspoon white vinegar
  • 1 cup water
  • 1/2 cup lime juice (reserved from cooking the shrimp)
  • Spicy chili flakes

Instructions

  1. In a mixing bowl, combine shrimp with lime juice and salt. Let marinate for about 15–20 minutes until opaque.
  2. Meanwhile, mix garlic, red onion, chopped cilantro, jalapeño pepper, and salt in another bowl.
  3. Drain excess liquid from shrimp and add to the marinade mixture along with cucumber slices and radishes. Toss gently to combine.
  4. Serve chilled, garnished with extra cilantro and sliced serrano peppers if desired.
